19 Jan 2006 08:46 pmHere's a couple of recipes I use with the kids for a quick, easy lunch or snack.
Cheesy Roll-ups
2 cans refrigerated pizza dough
1 small container onion and chive flavored cream cheese
2 cups mozzerlla cheese (one small bag)
1/2 cup shredded parmesan cheese
2 TBSP milk
1. mix cream cheese, mozzerlla, parmesan and milk in a bowl until smooth
2. open one pizza dough and spread on wax paper
3. spread cheese mixture over top
4. roll up dough and wrap in the wax paper. freeze for about an hour to ease cutting.
5. unwrap dough and cut into one inch wide pieces. Place on cookie sheet.
6. bake for 15-20 minutes at 425 degrees
These are really easy to make. Also try different combinations of cheese and flavored cream cheese. Or do pizza roll ups with pizza sauce mixed in plain cream cheese with mozzerlla and pepperoni
Cheesy Bagel Bites
This is kind of a variation on the roll-up recipe.
several mini bagels, cut in half
onion and chive cream cheese
mozzerlla cheese
(Italian seasoning, if you like)
This is really simple
1. preheat oven to 350
2. spread cream cheese on each half of bagel
3. sprinkle cheese on top and a little Italian seasoning if you want
4. bake for 10 minutes or until cheese starts to brown
I use these all the time for quick snacks on holidays or for lunch.
