Everyone has their own special meatloaf recipe. There are millions of variations. This is the one that has been passed down for generations in my family. Well, okay, just a couple of generations (that I know of). According to my mom, this recipe was one of my gramma's (faternal gramma) and my mom changed it to suit her and my dad. My dad hated meatloaf until he was in the Marine Corps and ate it all the time. Now it is one of his favorites, espcially this recipe.


Super Duper Meatloaf
3 lbs hamburger
2 eggs
1 packet saltine crackers
1 cup milk
3 packets onion soup mix, divided
salt and pepper (about 1 tsp. each)
A-1 steak sauce (about 1/2-1 cup, but it is up to your taste)

1. combine all ingredients (just two packets of onion soup mix)in large bowl until well blended
2. (this is a trick I use) Put 1/3 of the mix in cupcake pan sprayed with non-stick spray. Put the rest in a loaf pan, also sprayed with non-stick spray
3. cover with a thin layer of steak sauce and sprinkle with last packet of onion soup mix
4. cook in oven at 350 degrees for 45 minutes for muffins and about 2-3 hours for loaf. Periodically drain grease out of pans so that ends brown

The reason I do part in the muffin pans is that they cook quicker. I leave the loaf in the oven to brown while we eat and then use it for leftovers or (my personal favorite) meatloaf sandwiches. The kids also love getting individual little meatloafs.

meatball variation
This is a good one for summer time or for when you don't want to spend the day in the kitchen.
combine the ingredients like above, but instead of putting in pans, make into 1" meatballs and brown in pan.

Then put all meatballs in slow cooker and add about 1 cup water and the extra onion soup mix and a little steak sauce. Cook on High for a couple of hours or on low for about 4-5 hours.

This recipe results in gravy (yummy). To thicken gravy add some flour mixed with water an hour before done or transfer liquid to pot and thicken on stove.

I serve both with the dill potato recipe that I posted the other day. With the meatball one I make the potatoes almost like mashed potatoes. The gravy is really good with the dill.
