recipes:potato side dishes
18 Jan 2006 01:48 pmI thought this time I would post a few potato recipes we like.
Rosemary Roasted Potatoes
a whole bunch of red potatoes cut into small cubes
1-2 TBLS olive or vegetable oil
1-2 tsp crushed rosemary
a touch of sage and onion salt if you like
1. Put all cubed potatoes in big dish with oil. Toss to coat. Sprinkle in rosemary and toss until well coated.
2. Spread on baking dish sprayed with non-stick spray.
3. Bake at 445 degrees for about 30-45 minutes, depending on the amount. Or until they are tender. Yummy.
Oven Fried Potatoes
3-4 medium sized baking potatoes (or potato of your choice)
1-2 TBLS olive or vegetable oil
1/2 tsp garlic powder
1/2 tsp onion salt
1/2 tsp Season All (or favorite seasoning salt)
1/2 tsp pepper
1. slice potatoes into thin strips
2. toss in oil until well coated
3. add seasoning and toss again
4. spread on baking sheet coated with non stick cooking spray
5. bake at 445 degrees for about 30 minutes or until tender
Dill Potatoes
pot full of diced or sliced potatoes (like if you were doing mashed)
butter
dill
This is pretty simple
1. boil potatoes until really soft with dill in the water
2. drain well and return to pot
3. add a bunch of butter--however much you like
4. sprinkle with more dill
5. either eat like boiled potatoes or mash away with a spoon
This is a family tradition in our house. Whenever we had meatloaf we always had dill potatoes with it and I have continued the tradition. It was the only time we ever had dill potatoes. I got my dh hooked on them the first few weeks we were together. He loves them
